Waffles, Traditional Style

Ingredients

  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 3/4 cups milk
  • 1/2 cup oil
  • 1 tablespoon sugar
  • 1 1/2 tablespoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Recipe Instructions

  1. Preheat the waffle iron.
  2. Beat eggs in a large bowl until they are fluffy and well mixed.
  3. Slowly add in half the flour, stirring constantly to help prevent clumping. Add 1 cup of milk and stir, then add remaining 1 cup of flour, and stir. Finally, add the last 3/4 cup of milk and stir batter until everything is mixed well.
  4. Add the oil, sugar, baking powder, salt, and vanilla extract and mix well.

Cooking Notes

  1. Once the waffle iron is hot, spray with cooking spray or lightly coat the waffle iron with oil before you begin cooking.
  2. The first waffle often sticks, splits in half, or otherwise doesn’t turn out quite right so feel free to over oil your iron on the first round and toss the first waffle you make. Nothing goes to waste around here of course, we simply feed the first waffle to the chickens or pigs, but it’s certainly suitable for the compost as well or any hungry child that can’t wait for the rest of the waffles to cook.
  3. To help keep the waffles from splitting in half, we recommend opening the waffle iron very slowly when you are ready to take the waffle out of the iron. This helps keeps the waffle together so that each side doesn’t stick to the waffle iron and split completely in half.
  4. Waffles don’t really fluff up much when they cook, so you can go ahead and fill the entire waffle iron with a thin layer of batter to help make a complete waffle. At the same time, the batter is a bit runny so make sure to not overfill the iron or the batter can and will spill out the sides as the waffle cooks.
